Ken's Recipe's

Ken liked to eat. Sometimes that meant cooking. Other times it was eating at a friend's home, or eating out. I don't think that cooking ever rose to the level of giving ken great pleasure, but since the eating part did, cooking was just fine.

Carolyn Russell provided the following recipe of ken's from her collection. Thanks Carolyn.

Ken's Greek Chicken

Put some chicken parts in flat baking dish.

Pour over them some lemon juice.

Sprinkle on them garlic powder, salt, pepper, & some ground herbs (basil, tarragon, marjoram, herbs de Province, etc.,) (one of these) (to taste).

Every so often, tip the dish up, & a spoon the lemon juice from the low corner back over the chicken.

Repeat as your attention, energy, & compulsiveness dictate.

After about an hour, turn the pieces over, & repeat the basting process. (For another hour) Unto a bag, put some flour, salt, pepper, garlic powder, & a bit of whatever herb you've used.

Shake each piece of chicken, coating it.

Empty & grease the baking dish.

Bake the chicken 1 to 1 1/4 hour at 350F.

(The same time & heat as potatoes)


I'm not so sure this would count as a recipe, but it's a meal that Ken & I prepared many times at his house.

It was pretty simple. Broiled center cut pork chops & baked potato. The potatoes were baked in the oven & served with lots of butter & sour cream. The center loin cut pork chops, cut to 1 to 1-1/2" thick were just sprinkled with dried onion soup mix and then broiled in a toaster oven, turning once at about half time. The cooking time varied with thickness, of course, but the object was to cook to not quite past pink in the very center. Those two and a bottle of wine made a great dinner. Eventually, in deference to his change in lifestyle we dropped the bottle of wine.
